Coffee Catch-Up # 33

If we were having coffee I would tell you I can’t believe there is only one more week of summer. This year is going by so fast. Since our last coffee catch-up life has been very busy. It’s lucky that I have begun living a life of semi-retirement as I haven’t had time to work. One thing I have made time for on most days has been an enjoyable cappacino.

If we were having coffee tell you that on Australia Day this year it was 40 years since I started training as a psychiatric nurse. Back in 1981 the stigma attached to people suffering with mental illness was huge and many were too scared to seek help. Fast forward 40 years and with each decade, discussions about mental health have improved greatly. Now there are many options for treatment. One of the things that I am grateful for in Australia over the pandemic is mental health issues have been discussed openly and been at the centre of all government policy and decisions.

If we were having coffee I would tell you about travelling to Tweed Heads for a family wedding at the end January. The wedding itself was on the headland on the New South Wales and Queensland border. (on the New South Wales side.) It was set up so if there was still a problem with the Queensland border closures all guests could get to the wedding. The only problem was that to drive to the wedding site, we had to drive into Queensland and back into New South Wales. This was initially a problem to us as 3 of our 4 members were banned from entering Queensland due to having been in Sydney in the last 14 days. We worked out that we could walk if necessary but fortunately on the day of the wedding the borders opened up to all. So the problem was averted.

From our room in the resort, you could see the border barricades and despite the hotel being in New South Wales it ran on Queensland time. This was very confusing as our clocks would move forwards and backwards an hour depending on where in the motel we were. The front of the hotel also had dividing sections telling us which parts were in NSW and parts QLD. It was very weird for 3 days being able to see Queensland and yet not cross the road into it. On the day the barricades came down it was fun to watch the news being made from our motel room and to drive into Queensland because we could.

If we were having coffee I would tell you that our daughter started her registered nursing career and has moved into regional New South Wales. This has taken up much of our time both before and after the wedding. It’s surprising how much stuff she had in either our house or storage. Slowly but surely her house is coming together and eventually I can reinvent our spare room into my space. I am so proud of her taking a risk and moving to an area she knows no-one to follow her dreams and gain experience not attainable in the cities.

If we were having coffee I would tell you about walking around Sydney seeing the preparations for the Lunar New Year Festival. Throughout the city were various figures of the Chinese calendar. The first one we saw as the tiger which is also my favourite as I was born in the year of the Tiger. He was very cute and his eyes seemed to follow you around the park.

If we were having coffee I would tell you about our Sunday walk today. We went to Dixon Park beach, one of our local beaches, to see rocks and etching from 20 years ago that had been uncovered due to the amount of sand that has been washed away recently. This beach is between my two favourite beaches in the local area and I have walked it many times and never seen these rocks as they were covered by sand. Today you couldn’t walk between the beaches without climbing over the rocks. It was very strange. I was also fascinated that the sand in many parts was a mix of grey (assumedly from the rocks) and the usual yellow.

Coffee Catch-Up # 32

If we were having coffee I would tell you that I am not really sure where the last moth has gone. I worked up to Christmas Eve and then I was on leave. During this time I relaxed well reading and doing jigsaw puzzles. It wasn’t until returning to work this week that I returned to my routines including blogging.

If we were having coffee I would tell you about our family Christmas. At the previous Christmas the colour/theme is decided by popular vote. At times it can get interesting as all family members have equal voting rights. This year the theme was flamingo, anything pink or flamingo print. As this year we were on trend there were plenty of flamingo accessories to choose from. Christmas is always hosted by my sister and she and her family go to great efforts to make the day beautiful and memorable for all. I wish I had her level of creativity.

If we were having coffee I would tell you about my Sunday walk and coffee this morning. We walk around the local area randomly with no real direction and see what we can find. Today we hit the jackpot. We wandered across a brand new coffee shop that officially opens tomorrow. They opened today for foot traffic only but were happy to set tables and chairs up for us in the café. We were excited to be one of their first customers. By the way the coffee was amazing and we’ll definitely be back.

If we were having coffee I would tell you that over the summer I have been working on improving my Charcuterie board presentations. My last one was my best yet and I am beginning to feel more confident. No wonder they are so popular once you understand the principles of how to make them work there is no limit to options.

If we were having coffee I would tell you that the recent rain has helped the garden grow. Just after the new year I was down looking around for some salad vegies when I discovered our cucumbers had grown. I couldn’t believe it they were huge and tasted amazing. So fresh and crisp. And the good news is that I just finish one cucumber and there is another one to take its place. There is nothing like fresh garden vegies.

Coffee Catch-Up #27

If we were having coffee I would tell you I can’t believe that it has been over 3 months since I last blogged. Initially, this was due to writer’s block. I struggled to come up with any inspiration. I found it much easier when I first started blogging as I followed The Daily Post topics. If you have any suggestions or secrets to overcoming writer’s block I would love to hear them.

If we were having coffee I would tell you how much I’m enjoying using my sewing machine again. I hadn’t sewed for over 10 years but wanted to sew masks for my family. Operation cover up has been a family affair. My husband and I enjoyed going to Spotlight to choose fun materials to match everyone’s personalities. Then between my husband, daughter and I, after several trial runs, we eventually found a pattern that sat comfortably on all of our faces.

If we were having coffee I would tell you about our slide-on camper Ruby home. When it came to preparing her for our recent holiday, the hardest thing was deciding what was essential to take. This was because we were limited with weight availability. To fix this we needed to weigh everything we put in her. And if necessary find a lighter alternative. A bigger ute is able to carry a bigger load, so we will look for a new one before our longer trips. Eventually we won the battle and excluded 100 kilos worth of useful things. The we could legally depart and no longer put our insurance at risk.

If we were having coffee I would tell you how excited I was to buy myself a pie maker for my birthday. Today is my first attempt at making pies. I chose a basic beef mince pie for the filling. While cooking it had an amazing aroma. The frustration is the need for a delay between making the mince and making the pies. The reason is the mince filling needs to be cold when it goes into the shortcrust pastry or it will go soggy. End results, worth the effort for both regular and gluten free pies.

Coffee Catch-Up #25

If we were having coffee I would tell you how much I miss having real coffee dates. In Australia, we can buy takeaway coffee. But we can’t sit down anywhere to drink it. Mostly I enjoy my takeaway coffee alone. However, occasionally I share the experience with someone. Walking and drinking coffee isn’t the same luxury as sitting down together for a coffee catch-up.

Takeaway coffee doesn’t give you such amazing art.

If we were having coffee I would ask you if you did anything to celebrate Anzac Day last Saturday. Although I have always thought about attending a dawn service or Anzac Day march I never have. Some years I have gone to the pub to watch the Two-Up. This is a traditional Australian gambling game only legal on Anzac Day.

This year however was very different. No dawn services, no marches and no Two-Up. Instead families and individuals gathered on their driveways, social distancing and remembering our diggers at 0600. For me, it was very personal. I stood alone on my driveway. I was filled with emotion as I could hear the bugles playing The Last Post over the sounds of birds. Next year, I be on my driveway again. This time I will light the dawn with my candle.

If we were having coffee I would tell you how frustrated I have been over the past month with my blog not working as easily as it used to. The problem is everything needed updating and I am not computer friendly. Making the necessary changes has given me a lot of new knowledge about my blog and computer so my confidence has grown.

If we were having coffee I would tell you that I bought a subscription to Disney+for the family as an Easter present. My husband and I grew up in the 60’s watching the Wonderful World of Disney on Sunday nights. Our kids grew up with Disney channel, so there is something on it for everyone. We have all found many hidden gems and been entertained for hours.

If we were having coffee I would tell you I was pleased to complete this years A-Z blogging challenge. I stated a few days late but caught up and finished on time. It was a great way to retrain my brain into writing regularly and simplifying my words. Now the secret is to come up with a plan for Inspiring Max that helps my creativity develop.

Coffee Catch-Up #23

If we were having coffee I would tell you that I finished my Christmas shopping last Tuesday. What a relief. And yesterday I  finished wrapping all of the presents, which I always get excited about. Unfortunately, this year we won’t have a big Christmas tree to put them under as we are currently between trees. The one from our old house is broken from too much loving and I don’t want to buy a new one until we extend next year.  So in the interium it will be back to the small fibre optic tree that changes colours.

If we were having coffee I would tell you about how much fun the family of magpies that has taken up residence in our garden are having playing under the water sprinkler when Rod puts it on to water my garden each evening. They run around under the water in an attempt to cool off and then enjoy looking for worms in the soil. They are too quick for us however, so every time we go to take a photo they run away and play somewhere else.

If we were having coffee I would tell you that I really enjoyed flying into Sydney from Perth last week. As we flew overnight from the west coast to the east coast of Australia we saw a different flight path and to my surprise we also flew over our old suburb. I loved seeing the sunrise from the sky and an aerial view of what I think is the Parramatta River.

If we were having coffee I would tell you that I made my own baked beans this week and was very pleased with how tasty they were. Motivated by having had some when we were in Perth, I was on a mission to give them a go. I have since found some other recipes so I think I might give them all a try and then rank my results. Do you have a favourite baked beans recipe you’d like to share?

If we were having coffee I would probably ask you if you want some Christmas bush. Our tree has once again produced a bumper crop and sharing it with family and friends makes it feel like an Aussie Christmas. We have 2 vases in our house, the one below in the entry to our house and one in the kitchen, the hub of the home.

Coffee Catch-Up #22

If we were having coffee I would tell you that I can’t believe it has been six months since our last coffee catch up. Wow how quickly that time has flown. Life has a funny way of changing sometimes. When I started Inspiring Max it seemed all I did was work and blog. These days I work half as much but I am having so much fun, I haven’t been prioritizing my blogging. Fortunately for me, my blog has continued to work without my input so I am inspired to get organised and make 2018 my best blogging year yet.

If we were having coffee I would tell you how excited I am my veggie garden is complete. I finished the last garden just hours before departing for my holiday to Perth. It took months to do all 4 gardens as they were all created from scratch or given a total revamp with the help of my husband. I have been enjoying some of the herbs and lettuces that I planted earlier on a daily basis as I prepare my salads for lunch. I can’t wait to see how much they have grown while we are away.

If we were having coffee I would tell you about my last trip to Bunnings (a very large hardware/gardening store.) While I was gathering my gardening soil I suddenly felt eyes staring at me. I looked ahead and much to my surprise was a waterdragon sitting on the pallets like he owned the store.

If we were having coffee I would tell you about Kellie. Kellie is the name my daughter gave to the kookaburras who come to visit our backyard. They seem to enjoy being there, as they come often in groups of 2 or 3. Their laughter is very infectious and never fails to bring a smile to my face.

If we were having coffee I would tell you we are having a wonderful trip to Perth, Western Australia. According to the fridge magnet I bought yesterday it is the the most isolated city in the world. This could easily be true as it is nearly a 5 hour flight from Sydney.

To have a bit of fun with the distance my husband and I decided to allow the Pacific and Indian Oceans to meet. At 7am we went to Bar Beach (Newcastle) and walked into the Pacific Ocean. We gather some of the Pacific Ocean in a bottle and took it on the plane to Perth. At 7pm the same night we walked into the Indian Ocean at Bathers Beach (Freemantle). We then poured our bottle of the Pacific Ocean water into the Indian Ocean. Bucket list item complete.

P.S We didn’t wash our feet or legs between oceans so they were also mixed together on us.

If we were having coffee I would tell you how weird it felt to see the sunset over the ocean in Australia. Living on the east coast, we always see the sun rise over the ocean. I am hoping to view the sunset again, with more vivid colours next time.

If we were having coffee I would how amazing the Paul McCartney concert was on Saturday night. Prior to the concert I wasn’t a huge fan but I am now. What a show! I would have to say it was the best concert I have ever been to. https://www.inspiringmax.com/the-ageless-paul-mccartney

Coffee Catch-Up #21

If we were having coffee I would tell you that instead of coffee today we were having champagne to celebrate Inspiring Max turning 3 recently. Wow! I can’t believe how quickly that time has flown. When I started I knew nothing about blogging or where this journey would take me but I am so glad I took the plunge and dived head first into the deep blogging pool. I have learnt so much and love the sense of community out there in the blogosphere.

I love it when I connect with new blogs. My geography has also improved as I discover someone from a small country or island I didn’t know existed has visited Inspiring Max. Thanks for being part of my world and I hope our journey continues to deepen.

If we were having coffee I would tell you about our recent visit to Copeland Tops State Conservation Area, just outside Barrington Tops National Park. We walked the Hidden Treasure Loop Track, a 2 hour bush walk through a dry rain forest. The area is an old gold field and is scattered with old mine shafts throughout, so it is essential to stick to the path or risk serious harm or death. The highlight of our walk was Hidden Treasure mine entrance. Despite it being sealed up, with the help of flash photography we could see the old quartz seams that had once held gold. It was quite spectacular in its natural forest surroundings, but I wouldn’t have wanted to walk that distance to work every day.

If we were having coffee I would tell you how much I am enjoying working in my garden at our new house. I have always wanted to develop a vegetable and herb garden, but I’ve never had the time to devote to it. Now with only working part-time and not having children to run around my time is my own so I’m hoping to prove I have green thumbs. This week I began by making a herb garden, which so far is going well. I also bought a modern version of the Yates gardening guide to help me prepare for Spring planting. As Winter starts in Australia next week I’ll be planting soon enough. I am interested in any advice you may have of things to do or not do when growing my produce.

If we were having coffee I would tell you about King Street Boutique Motel, the accommodation my husband and I stayed at on our recent trip to Gloucester. It was created from one of the old homes of the area and contained a communal lounge, dining and kitchen area with 4 rooms on each side of the communal real. It was great value and our fellow travelers were friendly. Our room also had a little verandah that overlooked the driveway and from which you could see the  mountains in the background.

Coffee Catch – Up # 20

If we were having coffee I would tell you I can’t believe its nearly 5 months since our last coffee. Doesn’t time fly when you don’t keep an eye on it. Today I was also struck by how quickly I have lost my writing skills. From writing nearly everyday in my old life, I am struggling for inspiration today. I know it is purely because I haven’t written anything for a while, so I’ll make a commitment to myself to get back on track as I have missed you all.

If we were having coffee I would tell you that back in March my husband and I finally got our furniture delivered from Sydney. It was very exciting to see the big truck pull up outside. Finally, our move was complete. So we did what anyone in our situation would do and had a glass of bubbly (champagne) to celebrate. Yes, it tasted good.

If we were having coffee I would tell you how much I love the Sydney Royal Easter show.I love to spend hours walking around the pavilions — arts and crafts, food, leisure and kids — they are all amazing. Some people are so talented. I love the creativity especially in the fruit and vegetable displays every year. Each area creates a display using the fruit and vegetables they grow in a design that depicts where they are from. This year  my 3 favourites were

 

If we were having coffee I would tell you about my brother and his partner’s housewarming party. It turned out to be code for secret wedding. It was very exciting and caught many family and friends of guard as they had dressed for a backyard BBQ and ended up having their photo taken with the happy couple. Fortunately, my father who was in hospital was able to get a leave pass so was able to attend. As for me I was very suspicious they were up to something and was very happy to be proven right. I loved their wedding cake — chocolate mud cake topped with cute umpa lumpas to match the chocolate factory theme of their house warming.

If we were having coffee I would tell you how great it has been catching up with family and friends since moving back to Newcastle. Recently we meet some of our diving friends for dinner at Valentine Bowling Club and while the catch up was great, the sunset over Lake Macquarie was amazing. I had forgotten the joy a simple sunset can bring.

Coffee Catch-Up #18

If we were having coffee I would tell you that life has been very busy lately. I have started having a weekly in person coffee catch-up with a long time girl friend, I used to only see once a year. It’s a great way to end the week, we are having a walk and investigating the where the good coffee is around my local area.

If we were having coffee I would tell you that last weekend my husband and I  went on road trip last weekend for his birthday. The weather was really hot so although we originally planned to go into the country, we decided to stick to the coast. We went and looked at the Myall Lakes National Park. It’s an area on the mid north coast of New South Wales that I had never been to before because it’s a bit off the beaten track. It was beautiful with massive sand dunes and an amazing view of Broughton Island off the coast hiding over the hill. I’d love to return to the area when I have time to explore it further, taking a tent.

If we were having coffee I would tell you how amazed I was to see a giant eagles nest on one of the power poles heading into Forster. The first time we missed photographing it which was a shame as the eagles were sitting next to it. However, when we returned they had gone but the nest its self is still impressive.

If we were having coffee I would tell you that preparations for Christmas are going reasonably well although it will be a much quieter affair this year as our new house is to mixed up with our renovation work to put up a proper Christmas tree with all the trimming.  My daughter has bought her first Christmas tree and put it up in our old home. It looks great. Then just to rub salt into the wound she sent me a photo of our old house covered in lights for Christmas, something I have always wanted to do. I’m so jealous, but very proud of her creativity.

If we were having coffee I would tell you how frustrated I was spending literally all day trying to get my new free 6 month subscription  to Apple music to work on my new phone.Neither Telstra nor Apple have wanted to take responsibility and I can’t believe it still isn’t fixed. The whole experience has really tested my patience but everyone who has used Apple music tells me it will be worth it. I got it to at least work around midnight, although I’m not sure if it is the correct way. Meanwhile Telstra will get back to me on Wednesday, so here’s hoping they can work out if its correct then. I’m astounded it’s this hard.

If we were having coffee I would tell you I am still waiting to have my first swim of the season as every time I have been to the beach it has been too cool to swim or the beach wasn’t patrolled by life guards. I love the beach but as I am not comfortable with my ability to read the dangerous rips I won’t swim in unpatrolled waters as the power of the ocean can turn very quickly.

Coffee Catch-Up #16

If we were having coffee I would tell you what an interesting week I’ve had. Working less opens up more exciting opportunities that I would have normally missed out on.

If we were having coffee I would tell you about Parramatta Toastmasters 50th birthday celebrations on Thursday night. It was a special night with stories from Russ Walkington, the gentlemen whose ideas and  hard work made it to happen in the first place. What a dynamic speaker. He said it took a lot of convincing however once Parramatta Toastmasters Club started in September 1966 it had been a great success.  I was a little surprised however that for the first 25 years it was a men’s only club, with women not allowed to join until August, 1990, actually 2 days before my wedding. The women joining of course brought them even more success and in 1996, Parramatta Toastmasters Club was recognised as the fourth top Toastmaster club in the world.

Also at the dinner were many past members who have gone on to do great things as well as a few charter (original) members. One of my favorite thing was the parade of past Presidents of which there were 19 of the 49 present on the night. They were piped in by one of the current club members wearing his kilt and took up 3 lines on the stage.

If we were having coffee I would tell you how exciting it was to hear Toastmaster’s 2016-2017 International President Mike Storkey, DTM speak at Parramatta’s 50th Birthday. He was an inspiration and encouraged everyone to focus on the future not just  live on past successes. I agree. Life is definitely a journey, with the more interesting views coming after a challenging climb.

If we were having coffee I would tell you what a great day I had on Friday at Better Homes and Gardens Live. Better Homes and Gardens is  Australia’s favourite TV show and magazine, which brings together ideas for renovating, decorating homes and gardens as well as advice about pets. From the shows stars I learnt about chalk paint —making furniture restoration fun, quick and easy desserts and how to cook the perfect roast pork. Once we have finally settled into our new home, I look forward to testing out these and other ideas from my day out.

Education aside, I would have to say the most fun was had at the end of the day with Fast Ed attempting to make pigs fly. He attached helium balloons to his pig shaped shortbread cookies and willed them to fly. In the end it took 3 helium balloons to finally get lift off and they kept going until they rested on the ceiling.

If we were having coffee I would tell you about supporting my husband yesterday by going to the cinema with him to see The Beatles Eight Days a Week—The Touring Years. This documentary by Ron Howard  made sense of the Beatles Journey. Prior to this my knowledge of the Beatles was minimal however they really were game changers in more than the music scene. The movie is based around their 815 shows in 4 years performed around the globe. It was fascinating to see from old footage, the impact The Beatles had in a very different world and to consider problems like early crowd control. At the end of the movie came half an hour of seeing the Beatles live at Shea Stadium, New York concert. It was the biggest ever concert at the time involving 55,000 people. Amazing results, especially when you consider that they couldn’t hear where they were up to in the songs because of the loudness of the fans screams. If you get the opportunity, even if your not a big Beatles fan, take a break from today’s world, travel back 50 years and take in some history. Its well worth it. Ron Howard, you did a great job.
