Coffee Catch-Up #30

If we were having coffee we would be meeting in an airconditioned place this week not my home. The reason, in Australia this weekend we are having an extreme heatwave. I live on the east coast which is usually cooler than inland and it’s been 41C (106F) both days this weekend.

If we were having coffee I would show you this social distancing poster. I love it. It’s unique and I thought it was fitting for a country café.

I also loved this creative Covid Marshall at the same café.

If we were having coffee I would tell you about my upcoming Christmas calendars. This tradition I began in 2016 as Inspiring Max’s version of an advent calendar in the countdown to Christmas day. I love selecting the quotes and putting the posts together.

If we were having coffee I would tell you how proud I am of my daughter as she is now a registered nurse, just like me. She was also successful in obtaining the new grad placement of her choice in regional NSW.

If we were having coffee I would tell you about my son’s favourite birthday present, a black mini lop rabbit. He and his wife had been looking for a rabbit for several months. Every time they went to buy one, it was sold. Then just when they were thinking it wasn’t meant to be, they found him. To their surprise he was born on my daughter-in-law’s birthday. He is so cute.

Interestingly, the first pet my husband and I had when we married 30 years ago was a rabbit, only ours was white.

If we were having coffee I would ask you if to have to wear matching or odd socks. It was a conversation started last night at a family gathering. My brother deliberately mismatches his socks. My son and most others preferred matched ones. My sister then decided she would poll her friends and I thought I would ask you when we had coffee. Let me know your preferences in the comments.

Coffee Catch-Up # 29

If we were having coffee I would tell you about my coffee last Sunday. I was so surprised to see it presented in such a beautiful way. I couldn’t keep my hands off the smooth exquisite timber. The only thing missing to make it perfect was a small handmade cookie or piece of shortbread.

If we were having coffee I would ask if you picked the winner of the Melbourne Cup on Tuesday. In the late 1980’s and early 1990’s I had a knack of picking the winner every year. As I’ve gotten older, I quickly look at the form guide, decide it’s too hard and hope my sweeps win. Rarely. This year there weren’t even any sweeps at my work place. But on the bright side my daughter won and bought us pizza.

If we were having coffee I would tell you I saw my first Santa last weekend and you’ll never guess where. Some enterprising person has started a business called Sandy Claus. You guessed it, Santa photos at the beach. He had a crowd around him 8 weeks out from Christmas.

Go Sandy Claus. Only in Australia.

If we were having coffee I would tell you how exciting it was to hear that Australia has had 2 days of 0 local coronavirus transmissions this week. This is the first time since the start of the virus and a good sign that life is slowly returning to normal.

If we were having coffee I would tell you about the surprise I found buying fruit and vegetables this week. The world’s smallest tomatoes. They are so cute. And they taste like a flavour bubble bursting in your mouth.

Coffee Catch-Up # 28

If we were having coffee I would ask you if you were going to watch either football grand final this week. In Australia, we have two main codes of football. The AFL ( Australian Football League ) and The NRL (Rugby League). Personally, I follow both codes, but neither of my teams made the grand final this year. Last night Richmond Tigers 81 beat Geelong Cats 50. This game was held in Queensland for the first time because of COVID. Tonight the Rugby League grand final is being played in Sydney, its usual venue. In this game I am supporting Penrith Panthers, a local team against the Melbourne Storm. May the best team win!

If we were having coffee I would ask you if you saw the kite surfers at the beach over the last few weeks. The flat surf has been perfect for them. I was mesmerized watching them jump the waves moving in and out.

If we were having coffee I would tell you how happy I was with the gluten- free short crust pastry I made last weekend. I have never made it before. Actually I’m not a confident pastry maker. My last attempt at regular pastry was probably 10 years ago. But necessity is the mother of invention so I am on a mission.

The GF pastry was much softer than regular pastry, which meant it was harder to handle. Initially, this caused me some concern. However, I quickly realized if I cut it to the appropriate size I could hand mold the pastry into the pie maker. Fortunately, this rustic method resulted perfectly shaped pies with an amazing taste. Interestingly, the GF variety also had less fat coming out in the pie maker. Therefore to simplify my life once I have used up my shop bought regular pastry I will used GF for everyone. Simpler and cheaper. All I need now is a GF puff pastry recipe.

If we were having coffee I would tell you my getting organized strategy is working. I have been working on my blog more, although not as much as I would like. I also now write a weekly meal plan. This keeps me accountable and makes life easier by ensuring we have the food needed in the house. I am also walking to work again 2 days a week which I enjoy.

If we were having coffee I would tell you about the purple sweet potatoes my husband harvested a few weeks ago. I roasted them and have enjoyed them with varies meals. It is the first time we have grown sweet potatoes and we were surprised at how many came from one plant. Some could definitely enter a weird shaped vegetable competition.

If we were having coffee I would tell you I was surprised at how much I enjoyed being able to touch my mother for the first time since March recently. She is in residential aged are and to keep everyone safe we have been restricted to window visits. However, recently due to low COVID numbers we are now allowed limited access with permission. Hugging is out, but due to her physical condition she requires help to stand. It was by giving her support in this way, I realised how much I had missed her physical touch. I’m a hugger from way back. So I will be very happy when hugging is on the can do list again.

Coffee Catch-Up #26

If we were having coffee I would tell you how pleased I was last Sunday to be able to sit down and enjoy a cup of coffee at its place of purchase. In New South Wales you can only have 10 people in a cafe or restaurant so I was grateful we chose a less popular spot. Sitting down for a coffee made it feel like life is getting back to normal.

If we were having coffee I would wish you a happy Mother’s Day for a fortnight ago. For me Mother’s day weekend was so busy. It was my mother in laws 90th birthday and the first time I had seen my mother since lockdown. As we were allowed our first visitors to our house, my son and daughter in law surprised me with a special visit. It was the first time I had seen them since their Australian wedding.

If we were having coffee I would tell you that I have joined a three week push-up challenge raising funds for headspace. The first time I attempted my push–ups I was able to make 7 which surprised me. Over the next week I have increased my durability to 15.

If we were having coffee I would ask you if you had been to the beach this weekend to check out the enormous surf. It is mesmerizing. This morning we walked from Bar Beach to Merewether Beach. At times you couldn’t see any sand as it was covered in white water from the high surf. it probably won’t surprise you to know the fisherman left catch less, although I would give him points for trying.

If we were having coffee I would tell you how excited I am today having cooked my first amazing roast chicken. Yes. I have cooked a chook before but not in over 10 years and they usually don’t turn out well. Last weekend my husband and I went to buy a new frypan as the old one was no longer non stick. After exploring our options, I choose the Bacaarat 2 in 1 multi cooker. Today, for some unknown reason I decided to test it out by cooking my chicken. And I am pleased I followed my gut. The beauty of the multi cooker is that it is frypan, grillpan as well as roasting dish and lid. I used the roasting dish and lid for the first 2 hours and then for the remainder of the time let the chicken cook without a lid in the grill pan. No extra oil was used and a flavoursome, moist chicken was the result. With all the oil that came out of the chicken, I am sure it is healthier than the usual shop bought roast chicken.

Coffee Catch-Up #25

If we were having coffee I would tell you how much I miss having real coffee dates. In Australia, we can buy takeaway coffee. But we can’t sit down anywhere to drink it. Mostly I enjoy my takeaway coffee alone. However, occasionally I share the experience with someone. Walking and drinking coffee isn’t the same luxury as sitting down together for a coffee catch-up.

Takeaway coffee doesn’t give you such amazing art.

If we were having coffee I would ask you if you did anything to celebrate Anzac Day last Saturday. Although I have always thought about attending a dawn service or Anzac Day march I never have. Some years I have gone to the pub to watch the Two-Up. This is a traditional Australian gambling game only legal on Anzac Day.

This year however was very different. No dawn services, no marches and no Two-Up. Instead families and individuals gathered on their driveways, social distancing and remembering our diggers at 0600. For me, it was very personal. I stood alone on my driveway. I was filled with emotion as I could hear the bugles playing The Last Post over the sounds of birds. Next year, I be on my driveway again. This time I will light the dawn with my candle.

If we were having coffee I would tell you how frustrated I have been over the past month with my blog not working as easily as it used to. The problem is everything needed updating and I am not computer friendly. Making the necessary changes has given me a lot of new knowledge about my blog and computer so my confidence has grown.

If we were having coffee I would tell you that I bought a subscription to Disney+for the family as an Easter present. My husband and I grew up in the 60’s watching the Wonderful World of Disney on Sunday nights. Our kids grew up with Disney channel, so there is something on it for everyone. We have all found many hidden gems and been entertained for hours.

If we were having coffee I would tell you I was pleased to complete this years A-Z blogging challenge. I stated a few days late but caught up and finished on time. It was a great way to retrain my brain into writing regularly and simplifying my words. Now the secret is to come up with a plan for Inspiring Max that helps my creativity develop.

Coffee Catch-Up #24

If we were having coffee I would tell you that I can’t believe that it is over 2 years since our last catch-up. Where did that time go? It seems like only yesterday but so much has happened.

Today would have been my late father’s birthday. Next week will be the 1st anniversary of his death. This time last year was a weird mix of sorrow and celebration as we all wanted him to become an octogenarian. And he did. He was 80 for 5 days. Tonight my family is celebrating his life with a Bob party in his honour, like we did every year for his birthday.

If we were having coffee I would tell you that my son recently got married again. His original wedding was in Japan in April 2018, and last month he and his wife held their Australian wedding to celebrate with friends and family here. It was beach styled, overlooking beautiful Merewether Beach. Like the Japanese and Australian cultures, both weddings were different but amazing. and blended together, made a complete celebration of their love.

If we were having coffee I would tell you that my husband and I have been designing extensions to our house that we are now waiting on permission to build. We have never designed anything before and after nearly 18 months of tweaking we are happy with how it has come together.

If we were having coffee I would tell you that during a 6 month period in 2018 we moved ourselves out of our Sydney home, our daughter to live on campus in country NSW and set-up a new home for my son on his return from Japan, prior to his wife arriving a few months later.

Coffee Catch-Up #22

If we were having coffee I would tell you that I can’t believe it has been six months since our last coffee catch up. Wow how quickly that time has flown. Life has a funny way of changing sometimes. When I started Inspiring Max it seemed all I did was work and blog. These days I work half as much but I am having so much fun, I haven’t been prioritizing my blogging. Fortunately for me, my blog has continued to work without my input so I am inspired to get organised and make 2018 my best blogging year yet.

If we were having coffee I would tell you how excited I am my veggie garden is complete. I finished the last garden just hours before departing for my holiday to Perth. It took months to do all 4 gardens as they were all created from scratch or given a total revamp with the help of my husband. I have been enjoying some of the herbs and lettuces that I planted earlier on a daily basis as I prepare my salads for lunch. I can’t wait to see how much they have grown while we are away.

If we were having coffee I would tell you about my last trip to Bunnings (a very large hardware/gardening store.) While I was gathering my gardening soil I suddenly felt eyes staring at me. I looked ahead and much to my surprise was a waterdragon sitting on the pallets like he owned the store.

If we were having coffee I would tell you about Kellie. Kellie is the name my daughter gave to the kookaburras who come to visit our backyard. They seem to enjoy being there, as they come often in groups of 2 or 3. Their laughter is very infectious and never fails to bring a smile to my face.

If we were having coffee I would tell you we are having a wonderful trip to Perth, Western Australia. According to the fridge magnet I bought yesterday it is the the most isolated city in the world. This could easily be true as it is nearly a 5 hour flight from Sydney.

To have a bit of fun with the distance my husband and I decided to allow the Pacific and Indian Oceans to meet. At 7am we went to Bar Beach (Newcastle) and walked into the Pacific Ocean. We gather some of the Pacific Ocean in a bottle and took it on the plane to Perth. At 7pm the same night we walked into the Indian Ocean at Bathers Beach (Freemantle). We then poured our bottle of the Pacific Ocean water into the Indian Ocean. Bucket list item complete.

P.S We didn’t wash our feet or legs between oceans so they were also mixed together on us.

If we were having coffee I would tell you how weird it felt to see the sunset over the ocean in Australia. Living on the east coast, we always see the sun rise over the ocean. I am hoping to view the sunset again, with more vivid colours next time.

Coffee Catch-Up #21

If we were having coffee I would tell you that instead of coffee today we were having champagne to celebrate Inspiring Max turning 3 recently. Wow! I can’t believe how quickly that time has flown. When I started I knew nothing about blogging or where this journey would take me but I am so glad I took the plunge and dived head first into the deep blogging pool. I have learnt so much and love the sense of community out there in the blogosphere.

I love it when I connect with new blogs. My geography has also improved as I discover someone from a small country or island I didn’t know existed has visited Inspiring Max. Thanks for being part of my world and I hope our journey continues to deepen.

If we were having coffee I would tell you about our recent visit to Copeland Tops State Conservation Area, just outside Barrington Tops National Park. We walked the Hidden Treasure Loop Track, a 2 hour bush walk through a dry rain forest. The area is an old gold field and is scattered with old mine shafts throughout, so it is essential to stick to the path or risk serious harm or death. The highlight of our walk was Hidden Treasure mine entrance. Despite it being sealed up, with the help of flash photography we could see the old quartz seams that had once held gold. It was quite spectacular in its natural forest surroundings, but I wouldn’t have wanted to walk that distance to work every day.

If we were having coffee I would tell you how much I am enjoying working in my garden at our new house. I have always wanted to develop a vegetable and herb garden, but I’ve never had the time to devote to it. Now with only working part-time and not having children to run around my time is my own so I’m hoping to prove I have green thumbs. This week I began by making a herb garden, which so far is going well. I also bought a modern version of the Yates gardening guide to help me prepare for Spring planting. As Winter starts in Australia next week I’ll be planting soon enough. I am interested in any advice you may have of things to do or not do when growing my produce.

If we were having coffee I would tell you about King Street Boutique Motel, the accommodation my husband and I stayed at on our recent trip to Gloucester. It was created from one of the old homes of the area and contained a communal lounge, dining and kitchen area with 4 rooms on each side of the communal real. It was great value and our fellow travelers were friendly. Our room also had a little verandah that overlooked the driveway and from which you could see the  mountains in the background.

Coffee Catch – Up # 20

If we were having coffee I would tell you I can’t believe its nearly 5 months since our last coffee. Doesn’t time fly when you don’t keep an eye on it. Today I was also struck by how quickly I have lost my writing skills. From writing nearly everyday in my old life, I am struggling for inspiration today. I know it is purely because I haven’t written anything for a while, so I’ll make a commitment to myself to get back on track as I have missed you all.

If we were having coffee I would tell you that back in March my husband and I finally got our furniture delivered from Sydney. It was very exciting to see the big truck pull up outside. Finally, our move was complete. So we did what anyone in our situation would do and had a glass of bubbly (champagne) to celebrate. Yes, it tasted good.

If we were having coffee I would tell you how much I love the Sydney Royal Easter show.I love to spend hours walking around the pavilions — arts and crafts, food, leisure and kids — they are all amazing. Some people are so talented. I love the creativity especially in the fruit and vegetable displays every year. Each area creates a display using the fruit and vegetables they grow in a design that depicts where they are from. This year  my 3 favourites were

 

If we were having coffee I would tell you about my brother and his partner’s housewarming party. It turned out to be code for secret wedding. It was very exciting and caught many family and friends of guard as they had dressed for a backyard BBQ and ended up having their photo taken with the happy couple. Fortunately, my father who was in hospital was able to get a leave pass so was able to attend. As for me I was very suspicious they were up to something and was very happy to be proven right. I loved their wedding cake — chocolate mud cake topped with cute umpa lumpas to match the chocolate factory theme of their house warming.

If we were having coffee I would tell you how great it has been catching up with family and friends since moving back to Newcastle. Recently we meet some of our diving friends for dinner at Valentine Bowling Club and while the catch up was great, the sunset over Lake Macquarie was amazing. I had forgotten the joy a simple sunset can bring.

Coffee Catch – Up # 19

If we were having coffee I would wish you and your family a Merry Christmas and a Happy New Year. 2016 has been an amazing year and I have loved sharing it with you.

If we were having coffee I would tell you that Christmas 2016 had a green theme for our family, which was a great success. My sister who organises our family celebrations really should start a party decorating business. She does a spectacular job matching everything to the colour theme and we all help by coming dressed accordingly. It’s a special and memorable day for all who attend.

If we were having coffee I would tell you that life is getting exciting as our painter is slowly transforming our house into a home. The more work he completes the happier we are with our colour choice of grey/lavender walls and white gloss trims. Interestingly, when the family voted on next years colour theme for Christmas, they chose Gravender (a combination of grey and lavender), so we should have a head start on inspiration.

If we were having coffee I would tell you how nice it was to have Christmas bush back in our life. Our Newcastle property has an old Christmas bush tree and we have enjoyed giving some to family and friends again. Australians love Christmas bush and it helps bring the country to the city.

If we were having coffee I would tell you how much I enjoyed the preparation for Christmas this year. From the shopping to the baking I have loved the planning and execution of each task. Many of the things I now do have become my tradition but I don’t think I realised it until this year.

If we were having coffee I would tell you that I would love  to see the rain falling on Ularu at present. Due to the dryness of the area, rain on the rock is a rare but spectacular event.
